Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. In three compartment sink there is vinegar as sanitizer. Person in charge emptied and re-made sanitizer with bleach. Sanitizer tests at 75ppm.
Displayed food not properly protected from contamination. Displayed yogurt, chocolate chips and cut fruit are open to the public and do not have hinged lids or any guards over them.
Exterior door has a gap at the threshold that opens to the outside. Back door is open. Person in charge closed.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Crumbs where muffin pans are stored.

Employee dried hands on clothes/towel after washing. Observed operator wash hands and dry hands off on hand towel hanging off oven handles. The hand towel is not apart of a system that can renew the towel once it's soiled. Discussed with person in charge
Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed operator barehand contact salad fixings while preparing salads. Operator washed hands and then used hand sanitizer prior to preparing salads. Discussed and emailed AOP to operator.

Observed one food employee missing proof of training. Person in charge stated they will conduct training today.
