Handwash sink used for purposes other than handwashing. Bar has changed their handwashing sink and supplies to the three-compartment sink and stated the DBPR-approved handwashing sink is not in use. Explained to Operator and Bartender the importance of maintaining and using required DBPR handwashing sink in the approved plans. Discussed and recommended supplies that will fit in the approved sink small area. Explained that, even if you are not washing wares in the three-compartment sink, it still must not be used for handwashing.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Employee drinks stored on a shelf above the maketable on the cook line. Chef moved drinks away from food and food preparation and equipment.
Equipment in poor repair. Torn gasket observed on the bar small refrigerator.
Wiping cloth chlorine sanitizing solution not at proper minimum strength due to improper mixing. Employee remixed to proper ppm. Sanitizer Bucket (0 ppm Chlorine); Sanitizer Bucket (Chlorine 50ppm)
