Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Salad station - cut lettuce (48-50F). Per operator item was placed in unit approximately 15 minutes ago. Item not prepped or portioned today. Operator moved to drawer and ice packed to quick chill.
