Employee touching ready-to-eat food with their bare hands - ready-to-eat food used for multiple menu items, some of which will not be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Server cutting oranges and limes at bar without gloves then placing cut fruit onto customer drinks. Manager coached employee to use provided tongs when cutting fruits. Employee cut drink Fruit garnish with bare hands. Drinks with cut fruit and cut fruit were discarded by operator. Drinks were remade. Employee washed hands.
