Establishment has no approved Alternative Operating Procedure. Server cutting oranges and limes at bar without gloves then placing cut fruit onto customer drinks. Manager coached employee to use provided tongs when cutting fruits. Employee cut drink Fruit garnish with bare hands. Drinks with cut fruit and cut fruit were discarded by operator. Drinks were remade. Employee washed hands.
