Operator not complying with the procedures stated in the Process Waiver or HACCP plan approved by the Division of Hotels and Restaurants. On 2-5-26 a two hour temp was not recorded for Alfredo base. Temp of package in and final six were satisfactory. Records for 2-9 and 2-10 were satisfactory, Digital logs for walk in cooler were satisfactory.

Condensation dripping from condenser recommend placing sheet pans on top to prevent cross contamination to food. Door doesn't have a tight seal around frame which could cause the condensation.
