Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking....front line all cold holding chicken food, feta cheese, hummus, cut tomatoes, cut lettuce, tzatziki sauce, baba gonush being held less than 4 hours. Employee Time marked.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection.... Observed cooling blanched French fries 95F stacked pan one another with covered at walk in cooler. Employee replace food in shallow container and stored separately.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked...tzatziki sauce with day marked, manager date marked.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed gyro 70F at 10:55 to 71F at 11:20(cooling since 10:00). At this current rate of cooling food will not reach 41F within 4 hours. Observed cooling in big container. Operator portioned food into smaller containers.
