Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sliced cheese (54F - Cold Holding); hot dogs (53F - Cold Holding) located at top portion of reach in cooler located near kitchen entrance way, due to ice buildup at top portion of cooler unit. Manager removed food items and placed into another cooler unit for rapid cooling.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Printed and provided to operator at time of inspection.
