Observed their dish machine at 0ppm chlorine. Operator called a service man and set up a sink at 100ppm chlorine.
Raw animal food stored over or with unwashed produce. Observed raw chicken stored over unwashed tomatoes in the walk in cooler. Operator moved the products.
Stop Sale issued due to food not being in a wholesome, sound condition. Observed a filet of reduced oxygen packaged fish not removed from packaging before thawing. Operator willingly disposed of the filet.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the front buffet area: Cut tomatoes (46F - Cold Holding); Coleslaw (46F - Cold Holding); Potato salad (46F - Cold Holding). Operator stated it had been there or approximately 1hr. Operator placed more ice there. Observed in their inside walk in cooler: Chicken (48F - Cold Holding); Pork (46F - Cold Holding); Ham (47F - Cold Holding). Operator stated that the fridge was in defrost mode and did observe the ambient temperature drop from 48F to 40F within 25minutes.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed on the grill in a pan: Chicken (105F - Hot Holding). Operator stated it was a cooked and has been sitting there for approximately 30min after.
Toxic substance/chemical improperly stored. Observed multiple chemical cleaners stored over boxed soda in the back hallway.
Handwash sink used for purposes other than handwashing. Observed the wait staff hand sink sued to dump ice.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed a filet of reduced oxygen packaged fish not removed from packaging before thawing. Operator willingly disposed of the filet.

Observed dishwasher handling dirty dishes and talking on phone cupping hands around mouth and then handling clean dishes without changing gloves and washing hands. Manager corrected employee and had them wash hands and rewash dishes.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed chicken salad (48F - Cold Holding) held above the well in reach in prep top cooler. Operator states put there less than 30 minutes ago and moved inside bottom of cooler. Observed display case at front dining area sea salt caramel cheesecake (48F - Cold Holding); key lime pie (46F - Cold Holding); chocolate cheesecake (45F - Cold Holding). Operator states items added to case at 1030am, must be sold or discarded by 230pm. Operator will use time as a public health control if unit is unable to maintain foods at 41F or colder. Operator turned down thermostat.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed hose in standing water at outdoor mopsink and no vacuum breaker on hose. Manager removed hose from standing water.
Employee washed hands in a sink other than an approved handwash sink. Observed prep cook wash hands in 2 bay prep sink. Corrected to handsink.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked ribs cooked on Friday with no date. Manager added dates.
