Equipment and utensils not properly air-dried - wet nesting. Multiple metal pans next to 3 compartment sink stacked before properly air drying. Chef stated today is dishwashers first day and explained to employee proper time to stack dishes.
Floor tiles missing and/or in disrepair. Multiple floor tiles on cook line cracked/broken/missing. Also, cove molding behind floor mixer on cook line broken/missing.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Fan cover in produce cooler soiled with dust.
Wood food-contact surface not properly sealed. Multiple wooden serving platters in disrepair with cracked handles and slits.
