Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Item stored in reach-in cooler across from three compartment sink: Swiss cheese (45F - Cold Holding). Manager stated door was opened and closed quite a bit as cheese was close to the door. Manager had employee place cheese in reach-in freezer to reduce temperature to 41F.
