Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed cook touching biscuits, diced tomatoes and taco bowls with bare hands, educated cook on washing hands and wearing gloves-cook washed hands and put gloves on.

Employee stated the items were stored in the reach in cooler for approximately 45 minutes. Employee placed the items stored above the fill line in the bottom section of the reach in cooler
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. See stop sale. Raw shell eggs stored on the cook line on time as a public health control with no time mark. Owner stated the eggs were on time for approximately 1 hour. Owner placed a time mark on the eggs.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Wiping cloth sanitizer reading +200ppm chlorine. Owner replaced the sanitizer, new reading 100ppm chlorine.
Ice buildup in reach-in freezer and/or walk-in freezer. Ice buildup on the exterior of packaged food in the walk in cooler. Owner removed the ice from the packaged food.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the dish machine at 0ppm chlorine. Operator changed the sanitizer and retested it at 100ppm.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw eggs stored over milk in the cook line reach in cooler. Operator moved the milk.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken stored over raw fish in the walk in cooler. Operator moved the chicken.

Observed no written plan for their cold buffet product that is served form 11-2 everyday and then tossed afterwards. Emailed the operator a copy which they then printed and filled out.
