Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut tomatoes (48F - Cold Holding); butter (52F - Cold Holding); fresh fish (45F - Cold Holding) on hot cook line tops. Operator stated less than 4 hours and placed ice on products for quick cooling.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed vacuum sealing of raw meats being conducted with no HACCP plan.

Observed the dish machine 000ppm chlorine. Operator set up three compartment sink chlorine 50ppm to wash, rinse and sanitize.
