In kitchen reach-in cooler: lettuce (48F - Cold Holding); cheese (47F - Cold Holding); ham (45F - Cold Holding); hamburger (45F, 48F - Cold Holding); noodles (45F - Cold Holding); salmon (45F - Cold Holding); rice (42F - Cold Holding).
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In kitchen crockpot: meat sauce (98F - Hot Holding). Switch was bumped off. Manager switched on.
