Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cooked ribs on cook line in cooler in between the combi oven and flat grill with temperature at 56f. Operator stated that ribs were taken out around 9:30. Operator took ribs and put in walk in cooler.
Carbon dioxide/helium tanks not adequately secured. Observed CO2 tank with chain in mop area in back of kitchen not tightly secured. Operator tightened chain on tank.
Covered waste receptacle not provided in women's bathroom. Observed trash cans in women's room with no lid.
Equipment and utensils not properly air-dried - wet nesting. Observed multiple pans and plastic lids stacked on shelf by dish area with visible moisture.
In-use knife/knives stored in cracks between pieces of equipment. Observed knives on shelf by microwave, in kitchen across from combi oven, stored in between the microwave and lip of shelf. Operator moved knives.
