Observed garnish ice bath set up on cookline cut tomatoes (57F - Cold Holding); cut lettuce (57F - Cold Holding); shredded cheese (51F - Cold Holding); honey butter (61F - Cold Holding). Cut lettuce and tomatoes on line 2hours and will be held on time as a public health control and must be discarded if not used by 430pm. Honey butter and shredded cheese unable to tell when they were placed out of temperature see stop sale. Observed raw wings (50F - Cold Holding) covered in serving size plastic bags no lid on container in chicken fry area. Operator moved to lower portion of unit to quickly cool to 41F and will keep lidded when on well.

Observed potatoe soup (128F - Hot Holding), manager stirred to promoate even heating throughout product. Product must be stirred at intervals to promote evenheatingof 135F throughout.
Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Observed high temp dish machine wash temp at 159F and rinse temp reading on machine at 114F Discontinue use of dishmachine and manual dish wash must be set up at 3 bay sink until dishmachine is able to sanitize at correct temperature.
