Hot Holding: ribs 128 F, rice 117 F, Mac and cheese 133 F, Per operator ribs were put in hot box 30 mins prior. Operator turned up hot box at time of inspection to bring back up to temperature. Rice made at 9:30 and Mac and cheese made at 10:45. Operator turned up steam well at time of inspection.
