Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Cooked shrimp and lobster dumplings (50F - Cold Holding) and Cooked squash dumplings (50F - Cold Holding) at cooling drawers under flat grill. As per chef, less than two hours. Products were moved to another unit for rapid cooling.
