Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Raw Chicken holding 42-44f. Advised cold holding in shallow pans. Cooler also appears to be jammed packed full.
Warewashing sanitizing solution exceeding the maximum concentration allowed. Tested at 200-300 ppm, advised less chlorine, add more water. Now tested at 100 ppm.
