Observed chicken (50F - Cold Holding); shrimp (47-50F - Cold Holding); pico de gallo (50-52F - Cold Holding); cheese (51-53F - Cold Holding) in the large flip top cooler on the cook line. As per operator, items have been in the cooler for approximately 1 hour. Operator placed into walk in cooler to quick chill.
