Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Salmon patties thawed in the package inside the drawer on the cook line. The fish was removed from packaging.

Raw shrimp over ricotta cheese in the small flip top reach in cooler to the left of the cook line. The shrimp was reversed.

Observed: Water with a temperature of at least 85 degrees Fahrenheit shut off at employee handwash sink. By register, only cold water corking and temped at 75f. Manager turned on hot water valve. And water temped at 92f. Faucet handle just needed to be replaced. Priority: Intermediate
