Observed wet wiping towels in chlorine sanitizer solution of 300 ppm. Operator add water, rechecked 100 ppm.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed cheese (60/58F - Cooling) covered in plastic container, operator uncovered it.
No probe thermometer provided to measure temperature of food products.
