Operator stated tomatoes cut 1 hour prior, being stored in pan on top of ice, not surrounding product level, at this rate tomatoes will not reach 41F within 4 hours, added/submerged in ice surrounding product level. At Double door stainless upright reach in cooler; cut melon (50F - Ambient Cooling 10:25am/50F - Ambient Cooling 10:55am). Operator stated melon was cut 1 hour prior, at this rate melon will not reach 41F within 4 hours, moved to double glass door reach in cooler.
