Per manager, finished cooking approximately 10:00am. Manager moved pan onto grill to reheat to 165F and hold there.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. In Asber reach in cooler, house made tamales not date marked when removed from freezer. Per manager removed earlier in morning. Manager marked today's date on container.
