Food not prepared or portioned today. 2) two compartments- cooler-next to walk in cooler-; butter (48F - Cold Holding); steak (47F - Cold Holding); heavy cream (49F - Cold Holding), per operator food held less than 4 hours, advised operator to move food to walk in cooler for a quick chill. 2) flip top-; sliced American cheese (60F - Cold Holding); Swiss cheese (61F - Cold Holding) per employee food held less than 4 hours, observed food stored above the rim line. Employee moved food out of temperature and stored inside lower cooler for a quick chill.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. -one cell phone on shelf, above preparation table in kitchen area. -two cell phones on cleaning equipment storage shelf in dishwasher area. Employee removed all cell phones.
Equipment in poor repair. Two compartments cooler-next to walk in cooler- no keeping time control foods to cold holding temperatures of 41 and below. Advised operator no to use unit, until technician verified proper temperatures.
Ice buildup in reach-in freezer and/or walk-in freezer. Ice buildup up on flip top- counter point station.
Wiping cloth sanitizing solution other than chlorine, quaternary ammonia or iodine, not at proper minimum strength, not used according to label instructions. Sanitizer Bucket (175-sink and surface), employee made new solution, chlorine sanitizer (50 ppm).
Working containers of food removed from original container not identified by common name. Lower cooler- large contain white eggs no labeled, employee identified container.

Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired.
Equipment and utensils not properly air-dried - wet nesting. Clean equipment storage rack- Small containers of food stacked wet, employee removed from piles.

Operator discarded hollandaise sauce at will. Suggested using time as a public health control. Emailed TPHC procedures to manager.
Toxic substance/chemical improperly stored. Sanitizer wipes stored over pooled eggs inside low boy reach in cooler in prep station. Operator removed sanitizer wipes from unit.
Menu does not identify which items contain raw or undercooked animal foods ( Egg Benedict )covered by the consumer advisory. Operator placed asterisks on menu identifying Egg Benedict are served undercooked.
