Instructed employee to reheat food.

Observed in the prep cooler located at front line sliced tomatoes (59 F -Cold Holding); raw beef beef patty (63F - Cold Holding); raw chicken 62 (63F - Cold Holding), as per manager stored in the unit less than 2 hours. Employee removed all time control food from unit on site, and transferred it to cooler at prep area to rapidly cool.

Manager stated that she was aware of issue and that the owner had order the part in disrepair to fix the unit. Instructed employee to NOT store Time Control Food in this cooler util fixed.
