Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Triple Sink (Quaternary 0ppm). Solution changed and corrected to 200ppm Quaternary
Equipment and utensils not properly air-dried - wet nesting. Over the three compartment sink a stack of plastic hotel pans were stacked wet. The pans were separated to dry properly
Old labels stuck to food containers after cleaning. On some of the clean hotel pans old date stickers were still attached. The pans were removed and rewashed.
