Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed shrimp (47F - Cold Holding) held in plastic pan and double panned at prep top on cookline. Operator states shrimp have been at this location less than 1 hour and placed shrimp in bottom of cooler to quickly cool to 41F within 4 hours.
