Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. yogurt (54F - Cold Holding); milk (45F - Cold Holding); items in barista cooler on cooks line, the breaker had tripped and management was unsure how long cooler had been off, they voluntarily discarded food. boiled egg (46F - Cold Holding); chicken (47F - Cold Holding); mozzarella (47F - Cold Holding); corn (46F - Cold Holding) items in top portion of salad bar cooler, all items in the bottom portion of cooler were 41F or below, operator moved all out of temperature items to walk in freezer to rapidly drop in temperature.

Item has been out of cooler for 30 minutes, operator added water to ice to make an ice bath.
