Accumulation of debris on exterior of warewashing machine. Top of dish machine has accumulation of food debris. Operator had employee clean the machine during the inspection.
Equipment and utensils not properly air-dried - wet nesting. Pans on dry dish rack stacked together while not completely dry. Operator removed pans and spread them out to properly air dry.
