Raw animal food stored over/not properly separated from ready-to-eat food. Raw salmon over ready-to-eat deli meats, raw salmon is an employee food only. Operator moved to bottom shelf.
Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Operator uses chlorine sanitizer, only has quaternary test strips.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Tiramisu with cream, mortadella in far back reach-in cooler not labeled, per operator made six days ago. Operator labeled containers.
