Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Manager handled cooked chicken wings and french fries with bare hands in kitchen. Inspector coached manager on proper food handling procedures.

Observed approximately 215 rodent droppings in establishment: 150 in small storage closet adjacent to kitchen, 25 in back kitchen near rear exit door, 15 on front counter shelf where condiments are stored, and 25 around perimeter of main kitchen.
