Time/temperature control for safety food removed from cold holding for necessary preparation rose above 41 degrees Fahrenheit during the preparation process and was not cooled back down to 41 degrees Fahrenheit within 4 hours. meatball (45F - Cooling); pre cooked chicken (45F - Cooling); sausage (47F - Cooling); boneless wings (46F - Cooling) food was prepped at 10:33am, temperatures taken at 3:05pm. Operator moved items to reach in cooler.
