Open dumpster lid. Upon inspection observed dumpster lid open outside restaurant.

Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Upon inspection, 3 compartment sink quaternary ammonia sanitizer reading 0ppm. Operator manually dispensed sanitizer, correcting sanitizer to 200ppm.
