What the inspector wrote — 5 findings
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed the following stored at room temperature Alfredo (66F - Cold Holding) manager stated it had been out for 2 hours prior to inspection. Manager placed in cooler.

Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed string cheese on time plan with no four hour time marking. Manager stated it was taken out of cooler and put on time two hours prior to inspection. Manager time marked cheese.
