Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cream cheese filling (51F - Cold Holding) Observed sitting on counter in kitchen. Per operator, product must be at 50F for preparation of menu item. Advised operator to use time control. Time control procedure sent to operator. Per operator, not prepared or portioned today. Per operator out of temperature for approximately 30 minutes. Operator returned product to cooler.
