Exhaust system operated with filters removed. No means to capture grease and/or condensation to prevent dripping. Filters were removed for cleaning over pizza oven. Manager stated they were removed for cleaning and were air drying. Employee put filters back in during this inspection.

Food stored in a prohibited area. Cups of dressing on shelf under employee "koolaid"drinks in reach in cooler near pizza oven.
