Dented/rusted cans present. See stop sale. In kitchen on can rack 1 can of tomato sauce ( 6lb 11oz).
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At pizza preparation table cheesecake filling (63F - Cold Holding) per operator product on table for approximately 25 minutes. Discussed cold holding procedures with operator; operator moved cheese cake filling to walk in to cool.
Food-contact surface soiled with food debris, mold-like substance or slime. In kitchen can opener blade visibly soiled. Advised operator to remove, clean and sanitize.
Nothing was found. The inspector recorded no violations at all.
