Operator separated the hamburgers above the fill line in the pan to a separate pan and moved them to the lower section of the naked table. The hamburger below the fill line 42F cold holding. In the single door reach in cooler in the prep area, Poultry (46F - Cold Holding); Fish (47F - Cold Holding); cooked corned beef (46F - Cold Holding).
