Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Food items stored inside reach in deli cooler: raw chicken (46F - Cold Holding); chili (46F - Cold Holding); shredded mozzarella cheese (46F - Cold Holding) The operator stated that the kitchen was closed yesterday and only the bar was operating. At the time of the inspection, food temperatures had not yet been taken because staff hadn't arrived and the operator was still preparing for opening. Food items were voluntarily discarded.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Operator normally has Vomiting and Diarrheal Events kits that he orders off Amazon and was recently used yesterday. The inspector provided the operator a Clean-Up of Vomiting and Diarrheal Events (DBPR HR 5030-104) form to have as a back up. The establishment carries chlorine, the chemical associate with the form.

Dish machine is currently sanitizing at 0 ppm chlorine. Manager was aware and is conducting sanitization in three compartment sink at 200 ppm quaternary.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Mop sink behind beer walk in cooler in storage area lacks a vacuum breaker.
