Operator decided to put in the walk in cooler to chill quickly. The reach in cooler in the kitchen: chicken salad (55F - Cooling) at 9:15am since 30 minutes ago, rechecked (at 10:45 am 51F). Operator decided split the salad in two lower containers to chill quickly.
