See stop sale. Observed Turtle cheese cake donuts held on time control without time mark. Manager stated the turtle cheese cake were the only ones done at 6:30am, placed times on time log.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. coconut cream donut (72F); cream cheese donut (72F); strawberry cheesecake donut (70F) stored at room temperature in front donut counter. Manager stated cream topping for all donuts are made with whipped cream and cream cheese which is a TCS food and must be held under temperature control or time control. After reviewing with manager, she decided to placed donuts on time control. Manager stated donuts were prepared an hour ago. Manager completed time control form and time marked donuts.
