Employee with no hair restraint while engaging in food preparation. Observed employee engaging in food preparation without hair restraint.

Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. See stop sale. Observed Turtle cheese cake donuts held on time control without time mark. Manager stated the turtle cheese cake were the only ones done at 6:30am, placed times on time log.
Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed employee engaging in food preparation with watch and bracelets on.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed in walk in cooler fans dusty. Observed walk in cooler door gasket soiled.
Wiping cloth sanitizing solution stored over food storage. Observed sanitizer bucket stored over food buckets in kitchen. Manager removed and stored properly.

Observed establishment without proof of required state employee training.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. coconut cream donut (72F); cream cheese donut (72F); strawberry cheesecake donut (70F) stored at room temperature in front donut counter. Manager stated cream topping for all donuts are made with whipped cream and cream cheese which is a TCS food and must be held under temperature control or time control. After reviewing with manager, she decided to placed donuts on time control. Manager stated donuts were prepared an hour ago. Manager completed time control form and time marked donuts.
Cardboard used to line food-contact shelves. Cardboard used to line frying prep table. Manager removed and discarded cardboard.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Mixing small spoon stored in standing warm water ( 101F) by expresso machine in front beverage counter. Manager replaced water to hot water (140F)
Stored food not covered. Donuts and croissants stored uncovered in walk in cooler. Manager covered food.
Walk-in cooler shelves with rust that has pitted the surface.
Wet wiping cloth not stored in sanitizing solution between uses. Wet towel stored on beverage counter. Manager properly stored wet towel.
