Floor soiled under cooking equipments and shelves.
Single-service food containers not stored inverted or protected from contamination near prep area. Operator stored the food containers inverted.

Fish packaged in the establishment using a reduced oxygen method not bearing a label indicating that it is to be kept frozen until time of use. In the reach in cooler across from the cook line observed raw white fish in a reduced oxygen bag with no date mark or label indicating that it is to be kept frozen until time of use. Handwash sink not accessible for employee use at all times. The handwashing sinks next to the three compartment sink was being used to hold bottles at time of inspection. Operator cleared handwashing sink for use.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. In the stand alone cooler near the prep table, observed three 10k bags of raw chicken in reduced oxygen environment. Operator discarded before determining a stop sale. Stop Sale issued due to food not being in a wholesome, sound condition. In dry storage room, observed unsifted flour. Operator discarded flour. Flour and Breadcrumbs must be sifted every four hours and held no longer than seven days.
