Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Observed ambient temperature of shelled eggs (60F - Cold Holding)on shelf at prep table. Operator stated she just pulled them out a little while ago to make some dough soon. Operator placed eggs in reach-in cooler to chill until she is ready to make the dough.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed operator unable to provide test strip for chlorine sanitizer. Operator stated she tried to pick some up but restaurant depot was out of chlorine test strips yesterday.
