Manager educated employee, gloves discarded, employee washed hands and put in new pair of gloves.

Food no prep or portioned today. cut lettuce (50F - Cold Holding), per employee food held for two hours, observed lettuces stored above the rim line. Employee removed food out of temperature and stored inside cooling drawer for a quick chill.
