Soiled dry wiping cloth in use. Observed multiple wiping cloth on front line. Operator removed.
Unwashed fruits/vegetables stored with ready-to-eat food. Observed unwashed iceberg lettuce stored over RTE pepperoncinis and honey butter in walk-in cooler.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed tcs cheese (57F - Cold Holding); tomatoes sliced (52F - Cold Holding); sauce (51F - Cold Holding); hummus (48F - Cold Holding). As per operator, all above mentioned food items transferred to unit 3.5 hours prior to the inspection. Manager moved the temperature abused items to freezer to quick chill. After 30 min cooling all TCS food temped at 41-43F
No conspicuously located ambient air temperature thermometer in holding unit. Observed no ambient thermometer in a front line flip top unit that was out of temperature. Operator placed properly calibrated thermometer in the unit.
Unwashed fruits/vegetables stored with ready-to-eat food. Observed case with unwashed tomatoes stored over ready to eat Asian BBQ sauce.
