Certified food manager unable to answer basic Food Code questions pertaining to safe operation of establishment. Two certified food managers on site not able to determine what type of sanitation the dish machine utilizes. Dish machine is high temperature, educated shift lead.
Handwash sink not accessible for employee use at all times. Sink in prep area has extension cord running over faucet. Bins of flour in front of sink in front of hand sink in breading station. Moved all.
In-use tongs stored on equipment door handle between uses. On door of cooking equipment. Removed.
Unwashed fruits/vegetables stored with ready-to-eat food. Unwashed tomatoes on shelf over bags of cut cabbage in walk in cooler. Moved during this inspection.
