Fryer reach-in cooler:; buttermilk (49F - Cold Holding); raw chicken (49F - Cold Holding) for 3 hours 45 minutes per operator. Also Butter station, breading station countertop:; buttermilk (58F - Cold Holding); garlic butter (79F - Cold Holding) for three hours 45 minutes per operator. Operator states all foods are held for 4 hours then discarded, observed by inspector. As items were replaced, operator placed time marks on containers for discard. Additionally, operator filled out written procedures for using time as a public health control form.
