Observed dishwasher chlorine sanitizer at 000 parts per million. Employee adjust hose to sanitizer solution and primed dishwasher machine to retest at 100 part per million chlorine sanitizer.
Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed the following in walk-in-cooler: mashed potatoes (57F - Cold Holding); ham (49F - Cold Holding); strip loin(48F - Cold Holding); cheese cubes (50F - Cold Holding); cottage cheese (48F - Cold Holding); quart creamer (48F - Cold Holding); brisket (49F - Cold Holding); Pork (47F - Cold Holding); beef stew (47- Cold Holding);lobster bisque (48F - Cold Holding); soup (48F - Cold Holding); ground beef (47F - Cold Holding). Operator voluntarily remove item from use and disposed of them.
