Walk-in cooler - Cold Holding: cooked chicken 47 F, cooked onion 46 F, cooked pasta 47 F, raw tuna 44 F. Operator opened the walk-in freezer door to help cool food items in walk-in cooler.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. A container of cream of masala sauce 127 F and marinara 128 F stored in steam well. Operator turned steam well to higher heat to reheat items at time of inspection.
