Live, small flying insects found Observed 2 to 3 flying insects in pie, muffin and cooking display case. One flying insect landed on a cookie. Manager had the cookie discarded. Manager had all pie, muffins and rest of the cookies removed. They are cleaning out the empty display case and sanitize it. Called supervisor on duty and stated administrative complaint next day call back

Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Observe employee on cook line crack raw eggs with gloves on. Then discarded dirty gloves. Then reapply new gloves without washing hands. Employee is reeducated to wash hands after cracking raw eggs. Before reapplying new glove.
Ceiling/ceiling tile shows damage or is in disrepair.

Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized. Operator correct the 3 compartment sink. Had sanitizer in rinse compartment. And set up the right way

Observed employee using sanitizer wet wiping cloth. To wipe the down prep table with gloves on. Employee took off gloves and pursue to put on clean gloves on. Inspector stop employee before putting gloves on and reeducate the employee to wash hands before putting new gloves on before going for prepping
Observed can opener blade is soiled with old food debris. Operator took can opener to dish washer to get wash rinse and sanitize.
